If you follow me on Instagram, you saw me post about some delicious Chocolate chip cookies a few weeks back.

I promised I would post a recipe here.  I think I am finally ready to tackle this blog thing.  My meds are somewhat on course (finally)!!  I am not throwing up everyday, and I am starting to feel somewhat like a human being.  I still hurt. every. single. day. of my life, but I think the prompting to start this new blog so many months ago, was for this very reason.  I think it was to help me have something to keep me going for, and help me have something that was all mine, and all me.

God knew I needed an outlet.  So I am starting back with a recipe that I have been perfecting over the last couple months.  This recipe has kind of kept me going while I have felt so awful.  I would make them on those days when I had just enough energy to do something, and then I would share them with the people I loved.

So here is the recipe, and the few steps it takes to make them… they are so easy, and all your family will love them.

The key to any good Chocolate Chip cookie is BUTTER!! If I know I am going to make these cookies, I set the butter out ahead of time.  I will usually let it set out for a few hours.  If I don’t have that kind of time, I have a setting on my microwave that will soften the butter for me.  You don’t want the butter to be melted at all; just softened.  

Some people like to use butter without salt,  I like to use it with salt.  I like the flavor of the salted butter.  I think it really is just your preference?  I use a mixer when making cookies.  I am a Bosch girl, but if you have a kitchen aid that is great too.  If you don’t have a mixer you can certainly do this by hand.  When making cookies in a mixer, it is great to use the Dough paddles.

I love this sweet little butler’s baking pantry that we added to our house for this very thing.  I love making my baking messes in here. (I’ll share more about this room in upcoming posts)

The first step in the recipe is to cream together:

2 C. butter which is 4 sticks (this should be soft butter)

2 C. brown sugar

1 1/2 C. white sugar

Once that is creamed together, then you add:

4 eggs

4 tsp. vanilla

once this is all creamy then you add:

4 tsp baking soda

2 tsp salt

6 cups of flour EXACTLY (no more, no less) this will turn out perfect with this amount of flour

The dough should start to wipe from the bowl, this is that yummy butter in action!!

Once the dough looks like this, it’s time to add the chocolate chips. I like to add the really good kind.  This is what is going to give you the gourmet feel to your cookies.  I have Guittard milk chocolate chips at my house right now.  I have also used Ghirardelli as well.

I like to dump a big bowl of them in my batter.  You can use as little or as much as you like. It depends on how much chocolate you want per bite???

Once you have mixed the chocolate in, it’s time to start rolling them into balls.  I do this by hand.  You will want to make them bigger than you normally make cookies.  This is what is going to make them so soft, and delicious.  When I am making my regular chocolate chip cookies I would normally put 15 cookies on my cookie sheets.  With these gourmet cookies, you make such big balls that you only put 8 cookies per cookie sheet.

I love using these baking sheets to cook on.  This one even has the perfect spacing for 8 cookies.

Once you have made 8 perfect balls, you place your cookies in the oven for 8-9 minutes at 350 degrees.

When you pull the cookies out they should look like this:

They will be brown on the bottom, a little brown on the top, and slightly rounded in the middle.

Leave them on the pan for a minute to settle.  They will flatten some as they cool.

They kind of settle some, as they cool down.  Once they settle and cool for about 2-3 minutes on the pan then you should transfer them to a cooling rack.

Once they have completely cooled, then it’s time to set them out to enjoy!!!!

Your family won’t be able to resist, I promise!!

These are the perfect cookies, because they are a little crunchy on the outside and so soft in the middle.  Thats what happens when you make the cookies a little larger.  I have perfected all the ingredients, baking times, and the size of the cookies. I promise you won’t fail.

I mean look at all those Chocolate chips, and the smile on that face!!


They won’t be here long!!! You’re family will devour them!! The best part is you don’t have to go to those gourmet cookie places and pay like $3.oo a cookie anymore!
